About This Experience
Pho is one of the most misrepresented foods on earth. The version served internationally — and even in most tourist-facing Hanoi restaurants — is a loose approximation of what Hanoians actually make. The real Hanoi pho broth takes 8–12 hours and uses specific beef bones charred over flame, star anise and charred ginger, and a technique for skimming that takes years to learn. My grandmother made it every week. I make it for my family and occasionally, when the timing works, I invite visitors to come for the morning I make it. You arrive at 7am when the broth is at hour 6. We talk about what happened in the previous 6 hours. I show you how to finish the bowl: the precise sequence of adding thinly sliced raw beef, the herbs, the quẩy fried dough on the side. We eat at my kitchen table with the full pho spread — different cuts of beef, all the condiments. No performance, no tourism. Exactly what Sunday morning at my apartment looks like.

I am not a chef — I am a person who eats very seriously and grew up watching my grandmother make pho broth from 4am, who knows which bun cha stall has the right charcoal smoke, and which alley in Hoan Kiem serves banh cuon that the rest of the city lines up for. Hanoi's food culture is specific, regional and old. It is completely different from Saigon and almost nothing sold to tourists is real. I want visitors to eat what we eat.
