About This Experience

Zanzibar was the world's largest clove producer for over 150 years. The spice trade is why this island mattered — why the Sultanate of Oman made it a capital, why the British and Germans competed for it, why it smells the way it does when the wind comes off the plantations. My grandmother's kitchen uses spices she grows herself: cardamom, turmeric, lemongrass, vanilla, black pepper, and the cloves that have perfumed this island since the 1820s. I take small groups to a working spice garden outside Stone Town where you can taste everything still on the plant, then to my family kitchen for a 2-hour cooking session. We make pilau rice (the proper Zanzibar version, with 5 whole spices and slow-cooked meat), mchuzi wa samaki — coconut fish curry using the catch from that morning's dhow boats — and urojo, the Stone Town soup that Zanzibaris eat on Friday mornings, a tamarind-based broth with potato fritters, mango and cassava. This is a kitchen experience, not a demonstration. You cook, you eat what you make, and you leave with the recipes.

I was born in Stone Town and grew up in a Swahili family where the kitchen was the centre of everything. My grandmother could name every spice in our garden and what each one cured. I trained as a yoga teacher in Bali ten years ago and have been teaching on the beaches of Nungwi ever since. Female guides are rare in Zanzibar and I work specifically with women travellers who want something more than the beach-and-boat-trip circuit. My sunrise yoga sessions are on the actual beach, not a hotel deck, at the hour when the dhow fishing boats are coming in with the night's catch and the light on the Indian Ocean is extraordinary. I also run Swahili cooking sessions in my family home — proper Zanzibari pilau, coconut fish curry, and the urojo soup that Stone Town families make on Fridays. Zanzibar's food is one of the great undiscovered cuisines in the world.
