About This Experience
A bouchon is a type of restaurant that exists only in Lyon — small, family-run, serving the traditional Lyonnaise dishes that Paul Bocuse said were the foundation of French cuisine. There are about 20 genuine bouchons left in Lyon. Most of what markets itself as a bouchon is not one. I know the difference because I spent seven years cooking in three of them before I started guiding. I take small lunch groups to the bouchon where I know the family, where the tablecloths are checked and the andouillette is made in-house, and where the carafe of Beaujolais costs what a carafe of Beaujolais should cost. Before lunch, we walk through the morning market at Les Halles Paul Bocuse — the greatest covered food market in the world — and I show you what's in season, who the producers are, and why Lyon's food culture is different from everywhere else in France.
