Les Halles Paul Bocuse is a covered market that has been operating in Lyon since 1971 and contains what may be the finest concentration of food producers in the world under one roof. Fromageries with 300+ cheeses, charcuterie producers who have been making rosette de Lyon for four generations, fishmongers with lake fish from the Dombes, pastry counters with the regional specialities that nobody exports. I ran a kitchen for seven years and the market was my office. I take small groups on a guided tour — producer by producer, tasting as we go — with explanations of what makes Lyonnaise food culture distinct from the rest of France. The tour ends with a cheese tasting at the counter I have used for 15 years, paired with a glass of local white wine. You'll leave with a map of what to buy and where, and the confidence to come back alone.

Worth every cent and then some. I travel specifically to understand places through their food, and this is the best example of that I've found. Real person, real neighbourhood, real meal. Nothing theatrical, nothing performed for tourists. Just very good food and very honest storytelling.
