About This Experience

Chiang Mai's night bazaar and Sunday Walking Street are not where Chiang Mai eats. The street food that locals eat is scattered across a few specific alleys and markets that are invisible to most visitors: the khao man gai chicken and rice stall on Wualai Road that opens at 7pm and sells out by 9, the kanom jeen rice noodle vendor on the lane behind Tha Phae Gate who has been there since 1988, and the khanom bueang crispy pancake cart near Chang Puak Gate that operates out of a converted motorcycle sidecar. I take groups through four or five of these spots across an evening. Nothing I take you to is on TripAdvisor. All of it is extraordinary. The cost includes all food at every stop.

I grew up in a village 28km outside Chiang Mai, where my mother cooked over a clay pot and we grew most of what we ate. I moved to the city 15 years ago but I still cook Northern Thai — not the pad thai and green curry that tourists order, but the food that people in Chiang Mai actually make at home: khao soi with its proper fermented mustard greens, sai oua sausage pounded with lemongrass and kaffir lime, nam prik noom green chilli dip that goes on everything. I take people into Warorot Market at dawn and feed them in my kitchen. This food barely exists in restaurants, even here.
