About This Experience
The inner market moved to Toyosu in 2018 but the outer market — 150 shops, wholesalers, knife-makers, tamagoyaki egg vendors, the best tuna handroll in Tokyo — is still running and most visitors walk through it without understanding what they're looking at. I know every stall, every face, and which vendors have been selling the same product in the same spot since I was in my twenties. We walk through before the tourist wave (it starts around 9am), I explain how tuna grading actually works, why the knife shops on the eastern side are worth looking at even if you're not buying, and what the morning drinking culture at 8am around the market means in this context. We eat: tamagoyaki on a stick, fresh sea urchin on small rice, a bowl of clam miso at the same counter I ate at for 31 years. Everything is included. I have strong opinions about everything and I will share them all.

I sold fish at Tsukiji for 31 years — first for my uncle, then my own stall. I know every tuna grade, every seasonal fish, which counter restaurants in Kiyosumi-Shirakawa cut properly and which ones thaw frozen fish. The inner market moved to Toyosu in 2018 and I retired the same year, but the outer market still runs and I still go every morning because it's where all my friends are. I take people through it before the breakfast crowd arrives, then to a standing sushi counter run by a man who buys from the same suppliers I did for 20 years. Tokyo has extraordinary food if you know where to look. Most visitors never get close.
