About This Experience

Lima has over 5,000 cevicherías. Three of them are internationally famous and have 2-hour queues. About 200 of them are extraordinary and completely unknown to visitors. I take groups to three cevicherías across Barranco and Miraflores — one that opened in 1972 in a garage and never left, one that is run by a fisherman's family from Callao who moved the operation to Barranco fifteen years ago, and one modern cevichería that executes the Nikkei style (the Japanese-Peruvian fusion that emerged from Lima's Japanese immigrant community in the 1970s) without pretension or tourist prices. Between stops we walk along the Malecón clifftop path with views of the Pacific, and I explain how Peruvian cuisine accumulated its influences — Spanish, African, Japanese, Chinese, Andean — over 400 years without losing its identity.

Food writer and researcher based in Barranco, Lima. I have spent eight years documenting the origins of Peruvian cuisine — specifically the Japanese, Chinese, African and Andean threads that make it unlike anything else in the world. Lima has been named best culinary destination in Latin America multiple times, and every year more visitors come to eat at the big-name restaurants. I take people to the places where the same ingredients and techniques appear for a quarter of the price, in cevicherías that have been in the same family since the 1970s, and into my kitchen where I show how cebiche, causa and tiradito are actually constructed from ingredients sourced that morning at Surquillo market.
