I'm Marco — I'll Take You to the Sant'Ambrogio Market and the Florence That Eats Lampredotto

My name is Marco and my family has had a lampredotto stall in the Sant'Ambrogio market for 40 years. Lampredotto is the fourth stomach of the cow, slow-cooked in broth and served in a bread roll with green salsa — it is the street food of the Florentine working class and it is almost unknown outside of this city. It is also extraordinary.
