About This Experience
My name is Marco and my family has had a lampredotto stall in the Sant'Ambrogio market for 40 years. Lampredotto is the fourth stomach of the cow, slow-cooked in broth and served in a bread roll with green salsa — it is the street food of the Florentine working class and it is almost unknown outside of this city. It is also extraordinary. I take groups to Sant'Ambrogio market at 10am: lampredotto at our stall, a walk through the market explaining Florentine produce and the food culture of Tuscany, and then a sit-down lunch at a trattoria in the Oltrarno that serves ribollita, pappardelle with wild boar ragu, and bistecca alla Fiorentina from a Chianina steer raised in the Mugello valley. I explain what makes Florentine food different from the Italian food the world thinks it knows.
