My name is Sigrid and I have been eating Icelandic food my whole life. Iceland's food culture is one of the least understood in the world. The tourist restaurants serve puffin and hákarl because visitors expect them. The food Iceland actually lives on is different and considerably better: langoustine pulled from cold Atlantic water that morning, lamb from animals that graze on wild herbs at 60 degrees north, skyr eaten with blueberries for breakfast, and the Icelandic pylsur hot dog — served with raw onion, crispy fried onion, remoulade, and mustard — which is the one street food in Iceland that every food journalist in the world has agreed is extraordinary. I take groups through Reykjavik's food market and harbour area, explain the fishing industry that still shapes this country's diet, and end with the best langoustine soup you will ever eat.

Iceland's food story is completely misunderstood internationally — the hákarl (fermented shark) that everyone writes about is a novelty, not a cuisine.
