Flushing is where 200,000 Chinese immigrants actually live, shop, and eat — and the food is correspondingly different. The dim sum halls in Flushing are larger, more chaotic, and better than anything in Manhattan. The hand-pulled noodle shops are run by families from Shaanxi and Dongbei who have brought the real techniques with them. The dumpling counters in the New World Mall food court cost $1.50 and are better than anything at a restaurant. My parents ran a noodle shop on Main Street for 22 years. I grew up in this food culture and I know every stall, every counter, and every family worth visiting.
