Chicago barbecue is not what people outside the city think it is. It is not brisket, it is not pulled pork — it is rib tips and hot links, cooked in an aquarium smoker, served with mild sauce on white bread, eaten standing up at a counter that has been open since the 1960s. This is the food of the Great Migration — the food that Black families brought from Mississippi and Alabama and Georgia, cooked in the neighbourhood restaurants that have fed the South Side for three generations. My family has been in Bronzeville for four generations. I take small groups to the South Side for a morning that covers Maxwell Street Market (the original, not the gentrified version), the rib tip joints that still use the original technique, and the soul food counter that my family has been eating at since before I was born. This is the Chicago that doesn't appear in any travel guide.
