About This Experience

I take you into the spice souks of the Marrakech medina at 7:30am, when the vendors are setting up and the air still smells of cumin and argan oil instead of sunscreen. We walk through Rahba Qedima — the ancient spice square — and I explain what each spice actually does in Moroccan cooking, which ones are medicine, and which stalls are selling tourist blends versus the real thing. We eat breakfast at a neighbourhood café where none of the other customers are tourists: msemen flatbread with amlou (argan oil, almond and honey paste), harcha semolina bread, fresh orange juice and spiced coffee. I've been eating at this café since I was a child.

I have eaten in restaurants all week and nothing came close to this. Sitting at a real family table, eating food that took hours to prepare, learning the story behind every dish — this is what travel is supposed to feel like. Our host was warm, funny and extraordinarily knowledgeable. I have been recommending this to everyone I know who is going to this part of the world.
