I grew up in my grandmother's kitchen in the medina. She taught me that a proper Moroccan tagine takes three hours minimum and that every spice in the souks has a story. I open my family home to guests who want to cook and eat with us — not a demonstration, a real meal around a real table. My husband makes the mint tea. My daughter usually steals the best pieces of lamb.
