About This Experience

Chicago has the second largest Polish population of any city in the world outside Warsaw. That population built neighbourhoods — Avondale, Logan Square, the area around Milwaukee Avenue still called the Polish Triangle — that have been feeding Polish, Ukrainian, and Czech immigrants for over a century. My grandmother made pierogi in this neighbourhood when it was still overwhelmingly Polish-speaking. I'm a chef who came back to this food after ten years in fine dining. I take small groups to the delis, butchers, and restaurants that have been here since before the Second World War — for house-made kielbasa from the butcher who still uses his grandfather's recipe, pierogi from the restaurant where the owners still speak Polish at the counter, and żurek (rye soup) that is one of the most underrated dishes in any American city. Chicago's Eastern European food culture is extraordinary and almost invisible to visitors.
