Third-generation Polish-American, born in Wicker Park when it was still Polish. My grandmother made pierogi in this neighbourhood before it had a Whole Foods. I'm a chef who worked in fine dining for a decade before coming back to the neighbourhood food I grew up eating. Chicago's Polish, Ukrainian, and Eastern European food scene is almost completely invisible to visitors — but it's one of the most authentic and historically rich food cultures in any American city. I take people to Avondale and Logan Square for the food that built this city.
