Chef turned guide. I spent eight years in Korean restaurant kitchens — including three in a Michelin-starred hanshik restaurant in Gangnam — before I decided I'd rather share food than cook it anonymously. I run night food walks through Dongdaemun and Hongdae that hit the pojangmacha stalls, the 24-hour dosirak spots, and the fried chicken places that don't have English menus. I also do daytime market sessions in Noryangjin, the wholesale fish market, if you want to understand Korean seafood.
