Madrileño. Born in Lavapiés, lived in Malasaña, now in La Latina — which means I've spent 35 years eating my way through this city's best neighbourhoods. I used to work the bar at a taberna in La Latina that's been open since 1860. I know where to eat cocido madrileño the way it's supposed to be made, which mercado has the best cured meats in the country, and which tapas bars have been feeding madrileños (not tourists) for 50 years. Madrid's food scene is world-class and almost completely invisible to visitors who stay in the tourist triangle.
